Fine dining means something slightly unusual in Chiang Mai, and the MICHELIN Guide makes the point better than we can: the city's selection is overwhelmingly Bib Gourmand, the guide's value award, with no starred restaurant in it at all. This is not a city whose best cooking happens at the top of the price list.

What the top of the price list does hold is worth understanding as three distinct propositions. The heritage rooms — teak houses and colonial-era buildings along the Ping and in the old town — where the building is part of the meal and the cooking tends towards refined Thai or French-Thai. The hotel restaurants, which is where the city's most technically consistent kitchens sit, backed by supply chains and staffing that independent rooms cannot match. And the tasting counters, a young and genuinely interesting scene applying fermentation, preservation and fixed multi-course sequences to Northern ingredients — the one part of this category that is doing something the rest of Thailand is not.

Everything on this page sits in the upper two price bands our sources report. By international standards none of it is expensive; by Chiang Mai standards a meal here costs what a week of lunches does elsewhere on this site.

Book, and book early in high season. This is the one category on the site where walking in is unlikely to work, particularly at the tasting counters, which run small rooms and single sittings.

The tasting menus are where the ambition is. If you are choosing one splurge, the counters doing Northern ingredients in a fixed sequence are the meal you cannot have anywhere else.
